1)We want to be stocked out of our baked goods every 2-3 days and our other food every 3-4 days.
- We want to make sure that our goods are not sitting on the shelf for a long period of time.
- This will ensure that our food tastes as fresh as possible.
- Also this will ensure that we have an appropriate amount of food always in our diner.
Staff and Employment KPI:
2) We want our wages to be 6% of our total revenue.
- This will ensure that we are not over paying our employees.
- Ensure that we do not have to many employees compared to how much we are actually selling to our customers.
- If this number is to high then we know as a company that we will have to either lay people off or lower our wages paid to employees.
Kitchen Management:
3) We want to make sure that our employees in our kitchen are meeting the bill times of each menu item.
- If we are not meeting these bill times then we either have to find a way to meet them or possibly take the item off of our menu.
- We want to offer menu items that do not take our kitchen to long to produce or else this will be a trickle down effect on the entire diner.
- Customers do not like to wait that long to get their food served to them.
Front of House and Restaurant Management:
4) The number of customers we have on a month to month basis.
- Is this number increasing month to month or is this number decreasing month to month.
- Will allow us to know if we are doing the right advertising and spending enough on advertising or if we should just keep doing what we are doing.
- Also will allow us to know if people like our food and our prices, because if we are attracting more and more customers they most likely like what we have to offer.
5) Our seating efficiency.
- Are we turning over our tables at an efficient pace and still offering high quality service to our customers.
- Well help us find out what the average turn over time is per table, which will allow us to give accurate wait times to people who are waiting.
Sales and Marketing:
6) The value we as a company are getting from what we spend on our marketing and sales.
- Are we spending to much on marketing and not getting a lot back in return. This will allow us to figure out if we are doing the wrong type of marketing for our target market.
